Ammonium carbonate was used in experiment to distinguish 26 different phenolic components and in Capillary electrophoresis-mass spectrometry (CE-MS/MS) as rapid screening technique.1

General description

Ammonium carbonate is a hard white translucent mass. It is suitable as a leavening agent, pH-control agent, dough strengthener and texturizer. It can be prepared by ammonium sulphate and calcium carbonate by sublimation.2
