One unit will form 1.0 μmole of benzaldehyde and HCN from mandelonitrile per min at pH 5.4 at 25°C.

Application

Mandelonitrile lyase from almonds has been used in a study to assess the apoplastic antioxidant system in Prunus. It has also been used in a study to investigate screening for new hydroxynitrilases from plants.

Note that for an ammonium sulfate suspension, most of the enzyme will be in solid form. It is likely that only negligible amounts of enzyme will be in the ammonium sulfate solution.
