Potential Application for 2-Heptanone, Natural, FG

The primary flavor application of this ketone is blue cheese, but this would lend itself to a range of dairy flavors due to its creamy, waxy dairy notes. It lends a cultured nuance to sweet and sour cream, milk, swiss and cheddar cheeses. In fruit flavors, it is used to build a “circus peanut-like” nuance to banana flavors and will add fullness to apple flavors. The waxy nuance adds character to coconut flavors.
