Protein of the Month, April: Cellulase
Application: Cellulases are used for a variety of industrial applications in the textile industry, pulp and paper industry, and food industry. Cellulases are also used as an additive in detergents and to improve the digestibility of animal feeds. The depletion of crude oil and the emissions of greenhouse gases have prompted the production of bioethanol from the hydrolysis of lignocellulose. The efficiency of this process is still being worked out.
Action: Cellulase is produced by fungi, bacteria, protozoans, plants, and animals. These enzymes hydrolyze β -1,4 linkages in cellulose chains.
Did you know? The addition of Cellulases during fruit juice production improves the release of pigments from the skin of fruit.
