Biochem./physiol. Wirkung

Bevorzugte Spaltung: hydrophobe und aromatische Reste in den Positionen P1 und P1′. Spaltet Phe-Val-, Gln-His-, Glu-Ala-, Ala-Leu-, Leu-Tyr-, Tyr-Leu-, Gly-Phe-, Phe-Phe- und Phe-Tyr-Bindungen in der β-Insulinkette auf.

Einheitendefinition

One unit will produce a ΔA280 of 0.001 per min at pH2.0 at 37° C, measured as TCA-soluble products using hemoglobin as substrate. (Final volume = 16mL. Light path = 1cm.)

Hinweis zur Analyse

Der optimale pH-Wert beträgt 2–4. Aktiv in 4 M Harnstoff und 3 M Guanidin HCl. Stabil bei 60 °C. Pepsin wird bei pH-Werten zwischen 8,0 und 8,5 irreversibel inaktiviert.
