General description

Potassium sorbate is potassium salt of sorbic acid. Qualitative and quantitative estimation of potassium sorbate in foods and beverages by high-performance liquid chromatography (HPLC) followed by UV diode array detection (HPLC-UV) and LC-MS/MS (Liquid chromatography-mass spectrometry) have been proposed.
Potassium sorbate is widely used in the food and beverage industry as a preservative against microbial growth.
