应用
根霉的蛋白酶已用于通过自动Edman降解评估氨基末端附近氨基酸序列的研究中。 它也已用于研究在乙酸铜存在下与重氮乙酰基-DL-正亮氨酸甲酯反应使酶失活的研究。
来自根霉的蛋白酶已用于已种植和未种植的欧洲赤松幼苗的酶处理。
生化/生理作用
胃蛋白酶抑制素可抑制根霉的蛋白酶。
单位定义
除特殊说明，在pH 3.0，37℃条件下，一单位的酶每分钟将会水解酪蛋白以产生与1.0 μmole（181 μg）酪氨酸等同的颜色（Folin-Ciocalteu试剂提供的颜色）。
