General description

Acetaldehyde comprises of a carbonyl group linked to a hydrogen atom. It is a well-known mutagen and carcinogen.
This substance is listed on the positive list of the EU regulation 10/2011 for plastics intended to come into contact with food.

Application

Acetaldehyde has been used as a reference standard for the determination of acetaldehyde as a volatile constituent of extra virgin olive oil (EVOO) by gas chromatography coupled with ion mobility spectrometry (IMS).
It may be used as a reference standard for the detection of acetaldehyde which is formed as a pyrolysis product of tobacco additives and as endogenous aldehyde in human urine by gas chromatography-mass spectrometry technique.

Analysis Note

acetaldehyde forms the diacetal in alcoholic solution
