General description

Sucrose is a disaccharide, naturally occurring carbohydrate found in plants and a major product during photosynthesis. It is used as a sweetener, preservative, antioxidant, moisture control agent, stabilizer and thickening agent in food products and beverages, as an additive in syrups, invert sugar, confectionery, preserves and jams, demulcent, pharmaceutical products, chemical intermediate for detergents, emulsifying agents, and other sucrose derivatives.

It has been used as reference standard for comparison and quantitative measurement of 1H NMR with external standards using NMR spectroscopy.
