Furfural is a furan derivative. Production of furfural by dehydration of fructose, glucose and xylose using a biphasic reactor system has been reported.[1] Furfural, a Maillard reaction product, is reported to inhibit the growth and alcohol production bySaccharomyces cerevisiae.[2]
