General description

Acrylamide is a colorless, odorless, vinyl monomer formed from the hydration of acrylonitrile. It is a highly water soluble crystalline amide that polymerizes and forms a byproduct during the heating of starch-rich foods to high temperatures. Mostly used in the production of polymers mainly in the water treatment industry, pulp and paper industry and textile treatment industry and is used as a laboratory reagent. Acrylamide can act as a human carcinogen. It has a reactive double bond and an amide group.

Application

Acrylamide may be used as an analytical reference standard for the determination of the analyte in:
  • Environmental water samples using ion-exclusion chromatography-mass spectrometry system (IEC-MS).
  • Cereal-based food products by gas chromatography coupled to mass spectrometry (GC–MS) and reversed phase-high performance liquid chromatography with diode array detection (RP-HPLC-DAD).
  • Potato-based foods by liquid chromatography with diode array detection (LC–DAD).
