Gene Information

General description

Dephosphorylated casein is prepared by the action of potato acid phosphatase.[1] It displays improved solubility and less foaming.[2]

Application

Casein, Dephosphorylated from bovine milk has been used as a substrate in in vitro kinase assays of Arabidopsis thaliana GSK3/Shaggy like kinase,[3] casein kinase II[4] and NIMA (never in mitosis A)-related kinase 2 (Nek2).[5]

Packaging

100 mg in poly bottle

Biochem/physiol Actions

Clusters of phosphoserine in casein chelate iron and reduce its bioavailability. Partial enzymatic digestion of casein unmasks phosphorylated residues to alkaline phosphatase, permitting dephosphorylation and increasing the bioavailability of iron.
Dephosphorylated casein lacks a net negative charge and is less sensitive to calcium.[1] It is useful in food industry.[2]

Quality

At least 70% dephosphorylated.
