Alkylresorcinols are a naturally occurring type of phenolic lipid, present in substantial amounts in the outer layer of cereal grains. They are especially abundant in the bran layer of wheat and rye. Alkylresorcinols are known to have antimicrobial activity and are believed to have an anti-tumor function as well. Since they are not present in the endosperm, they are virtually absent in white bread. Therefore, alkylresorcinols are often used as biomarkers for whole-grain intake in research investigating the health benefits of whole grain consumption.
