Fatty acid methyl esters (FAME) are derived from esterification of fatty acids and transesterification of glycerolipids with boron trichloride/methanol. They are most suitable for separation by gas chromatogarphy (GC). Fatty acid methyl esters increases volatility, expands peak symmetry, and reduces sample activity, accordingly provides more accurate analytical data. FAME analysis is considered to be a key tool for both characterization of fats and oils and for quantification of the total fat content in foods.
