醋酸钠是分子生物学应用中广泛使用的一种试剂。它与醋酸一起用作缓冲剂,缓冲范围为pH 3.6 - 5.6。醋酸钠用于核酸的纯化和沉淀1,2,3,蛋白质结晶4,蛋白质凝胶电泳中的凝胶染色5,以及HPLC6。醋酸钠的大规模应用包括其在塑料生产中作为阻燃剂,在印染和制革中用作媒染剂7

大肠杆菌对不同水平的醋酸钠的反应的DNA微阵列研究已有报道8。在不同离子强度、不同盐(包括醋酸钠)的条件下,反相色谱中的蛋白质去折叠的情况已被研究9。醋酸钠与碳酸钠结合使用,用于增强冻干的枯草杆菌蛋白酶Carlsberg在有机溶剂中的活化10。醋酸钠可用作醋酸激酶的底物11
