Application
Lipases are used industrially for the resolution of chiral compounds and the transesterification production of biodiesel.
Biochem/physiol Actions
Lipases catalyze the hydrolysis of triacylglycerols into glycerol and free fatty acids.

1 U entspricht der Enzymmenge, die 1 μmol Essigsäure pro Minute bei pH 7.4 und 40 °C freisetzt (Triacetin, Fluka®-Nr. 90240 als Substrat; 50 U wie oben beschrieben entsprechen ~1 U, wenn Triolein, Fluka-Nr. 62314 als Substrat, bei pH 8.0 und 40 °C verwendet wird
