Beschreibung

General description

Tridecansäure ist eine aliphatische Monosäure. Für Strukturstudien wird sie mit β-Cyclodextrin (β-CD) komplexiert. Im kristallisierten Zustand kann sie in drei polymeren Formen (A′, B′ und C′) vorliegen.

Application

Tridecansäure wird als interner Standard für die Lipidanalyse von intramuskulärem Gesamtfett von Masthühnern und für die Fettsäureanalyse von Rogenlipiden des Chinook-Lachses verwendet. Sie wird in der Gaschromatographie auch als Referenzstandard zur Quantifizierung von Fettsäuren in Fleischproben eingesetzt.
