General description

Siarczyny to substancje występujące naturalnie w organizmie człowieka w wyniku metabolizmu aminokwasów zawierających siarkę w łańcuchach bocznych. Są one łatwo utleniane do siarczanów w reakcjach enzymatycznych i wydalane z moczem w ilości 1000 mg/dobę. Siarczyny są często uważane za alergeny ze względu na niekorzystne objawy obserwowane u pacjentów z astmą. Egzogenne źródła siarczynów obejmują zanieczyszczone powietrze, żywność i napoje zawierające dwutlenek siarki (SO2). SO2 jest cząsteczką, która łatwo reaguje z kilkoma małymi związkami, w tym m.in. aldehydami, ketonami, antocyjanami, kobalaminą, tiaminą, NAD, flawinami. SO2 oddziałuje również z resztami cysteiny w białkach i sprzyja sieciowaniu. Siarczyny są również stosowane jako regulowane konserwanty/dodatki/wzmacniacze żywności w suszonych owocach, winie, piwie itp. Są one uważane za GRAS (ogólnie uznane za bezpieczne) w żywności i napojach. W winie SO2 reaguje z cukrami, aldehydami i antocyjanami. Termin siarczyn jest używany dla wszystkich cząsteczek pochodzących od siarczynów: wodorosiarczynów, metasiarczynów i SO2. Całkowity siarczyn jest definiowany jako suma związanego i wolnego siarczynu.

Nadaje się do pomiaru siarczynów w różnych próbkach żywności i napojów (na przykład wina, nabiału, produktów w puszkach, soków, suszonych owoców itp.)

In case interference persists in the diluted samples, it is recommended to prepare parallel sample well(s) as sample background control(s) and adjust the volume to 50 µl/well with Sulphite Assay Buffer. It is advised to conducting a pilot experiment and testing several samples to ensure that the readings fall within the standard curve range.
