Ein phosphoryliertes Glycoprotein, das sich als Marker (~ 45 kDa) für Protein-Elektrophorese eignet. Wurde genutzt, um ein Tiermodell für Asthma zu entwickeln.

Albumin aus Hühnereiklar dient als natürliches Klebemittel.
Der Differenzialscanningkalorimetrie zufolge denaturiert Hühnereialbumin bei 84 °C. Ovalbumin kann als Trägerprotein für die Konjugation an synthetische Peptide zur Verwendung als Immunogen eingesetzt werden. Es hat die folgenden Aminosäuren: 20 Lys, 10 Tyr, 6 Cys, 14 Asp und 33 Glu, wodurch es sich zur Konjugation eignet.
