Application
Bromelain aus dem Ananasstamm wird als Positivkontrolle in Natriumdodecylsulfat(SDS)/Polyacrylamidgelelektrophorese(PAGE)-Zymogrammen eingesetzt. Es wird auch als Azocasein-Substrat zur Bestimmung der proteolytischen Aktivität eingesetzt.
Bromelain kann zur Hemmung der Biosynthese von proinflammatorischen Prostaglandinen verwendet werden. Es kann zur Verminderung der Blutgerinnung eingesetzt werden. Ananasstamm-Bromelain wird zur Herstellung von enzymatischen Hydrolysaten aus Pollen der Honigbiene verwendet .
Biochem/physiol Actions
Bromelain ist eine Cysteinendopeptidase mit umfangreicher Spezifität zur Spaltung von Proteinen. Bromelain kann aus dem Stamm oder der Frucht der Ananaspflanze gewonnen werden. Das Produkt P3169 (pGlu-Phe-Leu-p-Nitroanilid) kann als chromogenes Substrat zur Untersuchung von Bromelain verwendet werden.
