What compounds are present in this product 121800-M (AGE-BSA)? It is a mixture of different AGEs? In paper, DOI: 10.1038/srep27848 it is provided that it is a `mix of Nε -(carboxymethyl)-lysine,pentosidine, and others`. Could you please clarify this?

This product is prepared by reacting bovine serum albumin with glycoaldehyde, resulting in a glycated BSA with a 5,000–10,000% increase in fluorescence (excitation/emission = 370/440 nm) compared to control BSA, as confirmed by fluorescence spectrophotometry. The range of modifications is not determined using mass spectrometry. End products or impurities have not been further characterized.
